Memorial Day is Here...How about a fresh, easy salad for that cookout?
Watermelon and Black Bean Salad
4 C watermelon, cubed (About 1/4 to 1/2 of a watermelon, depending on its size)
1 can of black beans, drained and rinsed
1/4 bunch of cilantro (or mint if desired)
2 limes, juiced
4 oz goat cheese, crumbled
kosher salt and pepper, to taste
Very carefully stir all of the ingredients together, making sure that the watermelon doesn’t get too crushed. Season to taste. (Because of the natural sweetness of the watermelon, don’t be scared to season with salt...it will actually enhance the flavor of the melon.) Chill and serve!
